How to make a Bellini, the perfect cocktail for your Wedding reception March 12 2018

The "Bellini" is one of the most popular wedding cocktails in Italy, believe me, I've been to a few Italian weddings. 

It is a fresh peach and sparkling white wine mix, invented in 1948 by Giuseppe Cipriani, the owner of the famous Harry'S Bar in Venice, Italy. 

The name of the painter was given to the cocktail because Cipriani thought the beverage colour was similar to the peculiar colour of a drape in one of the famous artist's painting.  

Very fashionable drink in the 90's, it is still a refreshing pleasure, loved by many, and still quite popular for crowd cheers, anniversaries, galas, and yes, weddings. 

There is really just one fundamental rule to follow to get an amazing drink: it is very important to use fresh peach juice, not bottled juice, and absolutely not juice from concentrate.

Bellini cocktail 

for 2 glasses (let's start with a small dose for 2 people)

2 white peaches (we will need 100ml of juice)

200ml of prosecco 

 

Peel the peaches and slice them. 

Juice them and pass the juice through a sieve to get rid of all the little bits.

Pour the juice into a shaker with the chilled Prosecco.

Shake for a few seconds, then serve immediately in cooled flute glasses.
